Vankaya Menthi kura

Am sharing with my viewers the much loved dish ie VANKAYA MENTHI KURA.  I have some healthy green tiny brinjals today. I bought menthi kura from vegetable vendor and thought of preparing this yummy dish.

The tender brinjals and methi we get throughout the year. One can made with combination of menthi leaves like alu menthi, dosakaya menthi , menthi roti etc endless recipes depends on your creativity and taste. Of course the title itself is vankaya menthi but the major taste is of menthi leaves. Don't use too many spices in the curry.The flavor of menthi leaves will go off. The curry I did is very simple, flavourful and tastes good and adds dimension to the curry.

OK. Let us go to prepare.

Ingredients
  • Tender green brinjal(small ones)                1/2 kg
  • Fresh menthi leaves                                     2 cups (chopped)
  • Onion                                                            1 big (finely chopped)
  • Green mirchi                                                 3 chopped
  • Turmeric powder
  • Sugar                                                             1 tbsp(optional)
  • Coriander leaves                                            handful
  • Salt to taste
  • Oil
  • Mustard seeds
  • Cumin seeds
How I did it
  1. Wash menthi leaves, tough stems and roots removed. Chop finely.
  2. Take wok and add little oil. Let it heat.
  3. Add mustard seeds, let them crackle, add cumin seeds and turmeric powder.
  4. Add copped onion till becomes transparent. Add green chllies pieces also.
  5. Then add chopped menthi leaves. Saute the on medium low heat until it starts to tenderize.
  6. Meanwhile cut brinjal in plus shape. Brinjal should be whole.
  7. Place in water to avoid discoloration.
  8. Finally add tiny brinjal. Stir well and keep lid.
  9. Let it cook 1/2. Add salt and sugar.
  10. See the recipe is ready after 5 to 7 minutes.
  11. Garnish with coriander leaves and switch off the stove.



See the Delicious flavor of the curry. Enjoy with rice or roti.
