Sweet corn, Baby corn & Raw Tomato Curry

Hi Friends

     Today I am coming with simple and yummy yummy curry i.e. baby corn, sweet corn and raw tomato curry. The combo of sweet corn makes this curry to taste great with the mild sweetness and cute baby corn is the wonderful crunchy and light vegetables with raw tomato makes delicious and mouth watering dish.

This is a unique combination. Definitely worth trying this simple but tasty recipe.

Ingredients
  • Sweet corn                                    1/4 cup
  • Whole baby corn cobs                   5 to 6
  • Raw tomato                                    2 to 3
  • Onion                                              1 (chopped )
  • Oil
Grounding purpose 
  • Bengal gram                                1 tbsp
  • Coriander seeds                           1 tbsp
  • Cumin seeds                                 1 tbsp
  • Red chillies                                   5 to 6
  • Fresh grated coconut                   1/4 cup

How to prepare
  1. Wash baby corn and cut them into 1"  inch pieces.
  2. Cook the baby corn pieces in a pan till they becomes soft.
  3. It takes 10 minutes to get them cooked.
  4. Add a pinch of salt and turmeric powder while cooking.
  5. Drain the water and keep aside.
  6. Meanwhile pressure cook the sweet corn  with a pinch of salt.
  7. Clean and slice each tomato into long pieces depending upon the size.
  8. Fry bengal gram coriander seeds, cumin seeds and red chillies with  1/2 a tbsp of oil till turns brown. Let it cool and grind into smooth paste.
  9. Then add grated coconut and little water and grind again with couple of minutes.
  10. Take a pressure pan, add 1 tbsp oil. Let it heat. Add mustard seeds. Let them pop, then cumin seeds,  red chilli and turmeric powder.
  11. Then add grounded paste, let it cook for 2 to 3 minutes till raw spell go off.
  12. Add slice tomato, stir for couple of minutes  and add cooked baby corn and sweet corn. Add required salt Cook for 10 minutes.
  13. The consistency and texture should be thick.
  14. Transfer into bowl and garnish with coriander leaves.
     See the taste. This is  a perfect side dish for rotis and chapathis.

My Note

I love this dish as it does not require much oil.
You can pressure cook corn cobs with little salt and then cut into pieces.
Don't waste drained water. Keep aside and use it for grinding.
