Kakarakaya fry is very is delicious dish. Very easy preparation. Takes little time for preparation. We can take this fry with rice. chapati or as side dish . Try at once.

You can cut karela into small pieces also according to your taste.
You can add little curd and salt to karela pieces and then squeezing to avoid bitterness.
Don't waste squeezed water. It can be used as soup.

Ingredients
- Fresh kakarakayalu 1/2 kg
- Onion 1 big ( make slices)
- Turmeric powder pinch
- Red mirchi powder 1/4 tbsp
- Sugar 1 1/2 tbsp
- Salt to taste
- Oil

- Mustard seeds
- Urad dal 1/2 tbsp
- Curry leaves
- Wash kakarakayalu and cut into thin rounds.
- Keep it in the bowl and add pinch of salt and turmeric powder. Keep it aside for 5 minutes.
- Then squeez the karela pieces. Little water\will drain while squeezing.
- Take a pan. Add 3 tbsp of oil. Heat it on medium flame.
- Then add mustered seeds, urad dal, turmeric powder and curry leaves.
- Next add chopped onion. Fry it till onion becomes brown.
- Add squeezed karela pieces into it.
- Turning frequently.
- To cook fast, cover the pan with lid. Cook for 5 to 7 minutes.
- Take off the lid and see whether karela pieces turns little brown.
- Finally add curry leaves, salt and sugar.
- Sugar gives taste, brown colour to karela pieces and cut off bitterness.
- After karela fry becomes brown, switch off the stove
