Aam Ka Panna

Hi

The summer is very severe in Hyderabad. Daily in morning I prepare summer coolents like butter milk, water melon juice, ragi malt with thin butter milk, orange juice and sabja seeds water etc. and keep them in the fridge. We have it through out the day and also serve it to guests when they come home in the hot weather.

As tasty mangoes are already in market, I planned to prepare AAM KA PANNA with raw mangoes, a tasty and healthy beverage, refreshing summer drink/juice.

Let us go to prepare this yummy sour and sweet soft drink.

Ingredients
  • Raw mango                                      1 big
  • Jaggery/ sugar
  • Cardamom                                        2 to 3 powdered
  • Black salt                                          1/2 tbsp
  • Black pepper                                     4 to 5 powdered
  • Sabja seeds                                        1/2 tbsp soaked
  • Mint leaves                                        10
How I did it

  1. Wash raw mangoes under running water throughly.
  2. Pressure cook whole mango with little water for 3 to 4 whistles till they become soft.
  3. So that the peel comes off easily.
  4. Let it cool.
  5. Remove the cooked mangoes pulp and discard the peeled skin and seed.
  6. Add powdered sugar, cardamom, black pepper, black salt and mint leaves and mix well. It is easy to use blender into smooth puree.
  7. Transfer into a clean air tight bottle/jar.
Aam ka Panna is ready. Meantime soak 1/2 tbsp of sabja seeds with 1/2 a glass of water for 30 minutes. See sabja seeds are swollen up twice its size.

How to serve

Take 3/4 glass of cold water, add 1tbsp of prepared aam ka panna. Stir well. Add sabja water with sabja seeds and serve.

My Note

  • Measurements of pulp would be 1:2 ratio. ie 1 cup of pulp and 2 cups of sugar.
  • You can use jaggery also.
  • One can cut the mangoes and boil it prepare pulp. Pick your option.
  • You can use totapuri mangoes also.
  • Use only few mint leaves, otherwise raw mangoes flavor will go off.
  • The mixing of water while serving depend on the consistency and sourness of mango.

Nutritional Info

  • Unripe mangoes are rich in vitamin 'C'.
  • Loaded with Iron.
  • It has strong heat resistance properties.
  • Sabja seeds are rich in fiber. Best body coolent and increse immunity.
