Rekula rotti

This is a thick rotti made with rice flour and vegetables etc. The complete process will take almost 45 minutes which is little long, but very tasty.

Ingredients (for 8 pieces)
  • Rice flour                               2 cups
  • Onion                                     1 Small finely chopped
  • Green Chiles                          6 make it paste
  • Carrot    1 peel finely chopped
  • Cabbage   200 gms finely chopped
  • Peanuts powder   ½ cup
  • Curry leaves   20 to25 chopped
  • Salt to taste
  • Oil
Method of preparation:

  1. Peel and finely chop the onion and carrot and cabbage .
  2. Wash and grind green chillies and make it into paste.
  3. Wash and tear curry leaves into small pieces. Peanuts into coarse powder.
  4. Take wide bowl. Add rice floor, onion, green chillies, chopped carrot , cabbage and peanuts powder, curry leaves and salt.
  5. Mix it well
  6. Add a little water gradually and mix the ingredients into soft non sticky batter.
  7. Keep aside.
  8. Heat a dosa  pan (white metal rekulu pans are available for the purpose of these rottalu only) on a medium heat.
  9. Apply ¼ spoon of oil and spread hand full of batter like a thick dosa. Spread it with hand so that it is even thoroughout. 
  10. Sprinkle ½ spoon of oil on  roti
  11. Cover with pan cover for 4 to5 minutes.  .
  12. Remove the cover the pan , turn the other side of the roti and sprinkle few drops of  oil let it  for few minutes on a medium heat .
  13. Remove it, put the pan under the water and let it cool down. And repeat the same for the remaining batter also.
Serve this rekula rotti with curd or ghee
Note
We use 2 pans for preparing this dosa. We keep one pan ready with the batter spread by the time the other pan is stove. After completing 1 rotti, keep the pan for cooling and use another pan for next roti. Like this you have rotate and cook all the rottelu.
