Avial


It is a special dish in Kerala and has highly nutritional values as we are using number of vegetables. This is just like salad of  different vegetables by adding fresh coconut, curd etc. Very tasty, non spicy and a dish with minimum oil in it. One of the best dishes to add in your to do list. As we are using  number of vegetables we will need small quantity of each of them.

INGREDIENTS
  • Plantain                              1
  • Carrot                                1/4 kg
  • Beans                                 1/4 kg
  • Peas                                   1/4kg
  • Drum sticks                        2
  • Potato                                1
  • Sweet potato                      1
  • snake guard                        1
  • Green mirchi                       6 to 7
  • Jeera                                  1 tsp
  • Fresh coconut                     1
  • Coconut oil                        2 tsp
  • Beaten curd                        1 cup
  • Turmeric powder
  • Salt to taste  




How to prepare

  • Wash cut all vegetables lenth wise 2" pieces length wise
  • Take wide bowl and add 1 cup of water
  • All all the vegetables to the bowl and let them cook. Add salt  and turmeric powder when the vegetables are half cooked
  • Don't over cook the vegetables
  • Grind the chopped fresh coconut together with jeera and green mirchi to a smooth paste by adding little water
  • Add it to cooked vegetables.
  • Mix it. Heat it thoroughly, stir it well without disturbing vegetables.
  • Finally switch of the stove and add beaten curd and coconut oil and mix it well.

Serve it with rice , chapati or puri. You can eat it as it is also.

My Notes

Cutting vegetables by maintaining the uniformity is the key. Avial looks appetizing with long cut multi colored vegetables and is a very healthy dish for everybody.
