Dipin


Dipin is a rare dish made is very few restraunts in Hyderabad which is when put in simple words 'vadas dipped in gravy'.

INGREDIENTS

For vadas:
  • Channa Dal 1 cup
  • Salt to taste
  • Oil for deep fry
For Gravy:
  • Tomato         1
  • Onion 1
  • Green chillies 2
  • Red chilly powder ¼ spoon
  • Tamarind        25 grams (soak it and take juice out of it)
  • Turmeric powder pinch
  • Asafetida         pinch
  • Jeera ¼ spoon
  • Mustard seeds ¼ spoon
  • Sugar 2 tea spoons
  • Curry leaves 10
  • Salt to taste  
DIRECTIONS:


  • Soak channa dal for 4 to 5 hours.
  • Grind it coarsely and add salt to taste
  • Heat the oil in deep non stick pan
  • Drop Vadas one by one after the oil is heated and fry them till they turn golden brown 
  • Place the vadas on tissue paper to soak the excess oil
  • To make the gravy, take wide bowl and pour one tea spoon of oil.
  • Add mustard seeds, jeera, turmeric powder and asafetida
  • Then add chopped onions, chopped tomato and curry leaves
  • Fry it well
  • Add tamarind juice, chopped green chillies, red chilly powder, sugar and salt to taste
  • Cook till it turns little thick
  • Finally dip all the prepared vadas into the gravy and keep it for one hour.
Serve with hot rice or rotis
