Ragi Ambali

Today I want to share you all with typical healthy drink and which keeps you active and energetic ie RAGI AMBALI. This is summer special drink. It is very common preparation in rural ares. Now a days it is prepared as special  item in 5 star hotels. From health point of view and health awareness, most of us prefer this ragi java/ambali/malt. Yes I remember, in villages, farmers working in fields have their breakfast as ragi ambali and start their work. They won't get hungry till afternoon even though they  work hard as Ragi contains amino acid and Tryptophan which reduces appetite. Ragi made dishes is a popular diet in rural areas.

In our house, during summer season I prepare this ragi ambali in morning times this in a large bowl and keep in the fridge. My children and grand children have this  instead of tea/coffee and when ever they want.

It is a traditional Indian beverage, delicious either sweet or salt. I remember when our childhood my father brought ready made ragi ambali tins .They are available in  different flavors.

OK Let us go to prepare sour ragi ambali.



Ingredients          ( 2 glasses)
  • Ragi flour                   2 tbsp
  • Curd                          1/2 cup ( as needed )
  • Water                         1 glass
  • Salt                             1/8 tbsp
Cooked Ragi Flour & Curd

How I did it
  1. Take a bowl, mix ragi flour in water to avoid lumps formation and keep aside.
  2. Take another wide bowl, boil water and salt, turn the flame to low and add mixed ragi flour slowly. Stir continuously to avoid burning in the bottom and should have no lumps. 
  3. Cook 5 to 7 minutes. It starts thicken. Switch off the stove.
  4. Let it cool.
  5. Then add curd and water and mix with wooden kavvam.
  6. It can be taken as is or can be taken it cold keeping in the fridge.

Ragi Ambali

My Note
  • You can add finely chopped curry leaves and coriander leaves in sour ragi ambali.
  • If you feel bore taking with salt add chopped jaggery instead of salt and milk in place of curd.
  • For little variation add chopped bite size badam etc in ragi ambali.
  • Buy ragi flour in organic shops only.
Nutritional info

  • It keeps the body cool. Normally it is often taken in summer.
  • It is rich in iron and calcium.

    i used to give the Hot milk version to my daughters post partum , fortified with mixed nuts powder and cardamom powder or saffron And a trace of ghee.
    they used to say it was like payasam,
