Karamani & Brinjal

I am writing nutrition  healthy recipes preparing out of karamani or black eyed beans which supplies high quality proteins.
These dried karamani are available in the market.In some places called as bobbarlu. Generally dishes are prepared with combination of these karamani and vegetables like brinjal and tomato etc. Snacks like karamani vada (garelu) also. Please see my other posts for these recipies.

Ingredients

  • Dried karamani                    1/4 kg
  • Brinjal  (green)                      1/4 kg
  • Onion                                    2 chopped
  • Green mirchi                          4 chopped
  • turmeric powder   
  • Coriander leaves
  • Curry leaves
  • Salt to taste
  • Oil                                        1 tbsp

  • Mustered seeds
  • Jeera
  • dry red mirchi                          2 or 3

How to prepare

  1. Soak karamani over night.
  2. Pressuure cook the soaked karamani with a little salt.
  3. Keep aside.
  4. Wash and cut brinjal into slices like pieces  and keep in the water.
  5. Heat the oil in the pan , heat it and add mustered, jeera and  red mirchi. Fry for some time.
  6. Then add chopped onion green chillies and let them fry them.
  7. Add brinjal pieces and cook some time
  8. Now add salt and turmaric powder and boiled karamani to it.
  9. Stir well.
  10. Finally add coriander leaves and curry leaves and mix well..

This is dry curry. we may take this as side dish or with rice.
